Low Carb Hamburger Asian Lettuce Wraps

I actually made it to the grocery store this weekend so we should have a week of good eats ahead!



I have played around with low carb Asian food a little, but I had never made lettuce wraps. I really enjoyed the way they came out but Husband wasn't so fond of it. He hates soy sauce apparently?  Took me 5 years to realize that. He very bluntly said he just couldn't eat it.






Hamburger Asian Lettuce Wraps

2 lbs of ground beef (or turnkey/chicken)
1 red pepper
1 green pepper
1 can of water chestnuts
Sauce:
3/4 cup of Soy Sauce
2 T seasoned Rice vinegar
2 T Hoisin Sauce
1 teaspoon ground ginger
1 teaspoon crushed garlic
1 teaspoon 5 Chinese Spice Powder (optional)

Brown the hamburger, drain and set aside. Dice the peppers and water chestnuts. Add some sesame oil to a frying pan and cook vegetables until tender. Mix the sauce together in a bowl, season to taste. (I don't like a lot of Hoisin Sauce and would only add 1 T next time.) Add the hamburger to the vegetables and pour the sauce over mixture. Stir everything together and simmer. Serve in lettuce cups. Makes great leftovers!


Tip: Hoisin Sauce, soy sauce, seasoned rice vinegar and water chestnuts can all be found on the Asian aisle of your grocery store. 5 Chinese Spice Powder is on the spice aisle.
