One Bowl Meals-Shrimp Stir Fry

I am a big fan of one bowl meals. I think it has to do with that I don't like to chase my food around the plate. I'd rather simply have it trapped by the "walls" of the bowl.


One of my favorite one bowl meals is Shrimp Stir Fry. Its basically just lots a veggies with some shrimp thrown in. Its one of the purest meals to make and it is perfect for summer. All the random veggies for sale at the farmer's market will fit in perfectly. Here is a rough recipe to go off of. 

Shrimp Stir Fry

1 bag of frozen large shrimp
1 bunch of asparagus
2-3 zucchini
3-4 yellow squash
1/2 yellow onion
2 different bell peppers
 (red/green/orange/yellow)
2 T of crushed garlic
EVOO to coat veggies (or butter)

Dice the onion, cube the zucchini and squash, slice the bell peppers and cut asparagus into thirds.Put the onion into the hot frying pan and let the onions cook for a few minutes until they start to turn translucent. Add everything else and season with salt and pepper. In another frying pan heat up some oil over medium and cook the shrimp until pink. Either keep whole or cut in half. Once the veggies are done (soft but not mushy), toss in the shrimp. Optional: squeeze some fresh lemon juice over the stir fry. 

I don't have a picture, but as you can imagine it is quite a colorful dish. It would make good leftovers if there ever were any!

                                    Why eat skittles when you can taste a real whole rainbow?
