Chicken Drumsticks


Chicken drumsticks are incredibly cheap and easy to make. There are a ton of recipes but here are two of my favorites (excluding the southern fried variety)

Baked Chicken Drumsticks

Wash and dry your chicken. Toss in a large bowl with olive oil until coated. Melted butter or coconut oil also work.  Choose a rub that works for you. I didn't put amounts because it will depend on how much chicken you have. I also like to blend all the spices together and taste it before rubbing on the chicken.

Chicken Drumstick Non-Spicy Rub
1 part Garlic powder (or crushed garlic)
1 part Onion Powder
1/2 part Salt
1 part Pepper
1-2 part Italian Seasoning (optional)

Chicken Drumstick Spicy Rub
1 part cumin
1 part curry 
1 part chili powder
1/2 part ground allspice
1/2 part ground cinnamon
1/4 part pepper
1/8 part cayenne pepper
Touch of salt

Just rub the rub over the chicken and lay out on a lined cookie sheet. Cook at 350 degrees for about 45 mins to 1 hour. Internal temp should be 165 degrees.  Serve with veggies of your choice! 
Non-spicy chicken with a true iceberg wedge salad 



LC Buffalo Chicken Drumsticks

Wash and dry your chicken. Toss with melted butter and crushed garlic. Sprinkle with salt and pepper. Place on a lined cookie sheet. Bake at 350 degrees for 45 mins to 1 hour until internal temp reaches 165 degrees.  

While the chicken is cooking, melt 4-6 Tablespoons of butter in a sauce pan. Add 1 cup of Frank's Red Hot Original Hot Sauce. Let it simmer. I have never gotten it to get really thick but it will thicken a little. 

After the chicken is done, place in a bowl and toss with the hot sauce. Serve with a cool Blue Cheese Wedge Salad.
