The Low Carb Pizza Alternative

Pizza Liz Lemon Style

Pizza is one of the hardest things to give up. Its easy (to pick up a phone and order) and quick (if they drive fast enough). So as we started to eat cleaner we still had the occasional (weekly) pizza splurge. Thankfully we found out about low carb pizza. Its a little more work, but so tasty and you won't feel fat and bloated in the morning. So its like a lose, win situation?

Low Carb Pizza


6 eggs
6-7 oz of cream cheese
1 T garlic powder
1 T Italian Seasoning
Pinch of Cayenne Pepper
Pinch of Salt
Shredded Parmesan Cheese
Grated Mozzarella Cheese
Marinara sauce
Toppings

Start out by blending your eggs and room temp cream cheese together in your mixer. Add the garlic powder, Italian Seasoning, cayenne pepper and salt.  Spray a 9x13 pan with Pam. Spread at least one cup of Parmesan cheese across the bottom. I throw in a handful of mozzarella too. 
Then pour in the egg mixture
Bake at 350 for 25-30 minutes or until golden brown
Mine isn't as brown as I like it, but I had hungry kids.
Spread the marinara on. Don't make it to thick of the crust becomes soggy.
Add your toppings. I did green and red peppers with pepperoni
Bake at 375 for another 15 minutes or until the cheese is melted and bubbly
Ta da!
I use a glass 9x13 because I think it helps the edges get crispier.

So you can use a whole range of toppings. Just start with what you like to order and add on from there. Proportions are very important to this dish, so if it doesn't turn out right the first time try using a little less. It took me a while to get the right cheese to egg to sauce ratio down. You really can't have to many veggie toppings. If you add several different meats it can get a little greasy. I used pepperoni because it was easy, but bacon or sausage work nicely. Just make sure it is drained before putting on the pizza.
